Crazy artichokes, cream and bacon

Artichoke has never been so delicious as with this recipe with cream and bacon, deliciously spiced with tomatoes and white wine.

Ingredients for 6 people:

  • 3 beautiful artichokes
  • 100 g of bacon
  • 2 nice tomatoes
  • 20 cl of white wine (or cider)
  • 2 lemons
  • 10 g semi-salted butter
  • 10 cl of fresh cream
  • 3 cloves of garlic
  • Salt pepper

Crazy artichokes, cream and bacon

- Wash, hull and cut the tomatoes into small cubes.

- Peel, wash, degerm and chop the garlic.

- Prepare the artichokes: break the tails. Cut them into 4 or 6 pieces.

Remove the hay, wash them and immerse them in a bath of lemon water. Drain.

- In a sauté pan, melt the butter, just brown the artichokes.

Add the diced tomatoes and the bacon. Stir and sprinkle with white wine.

Season, cover and cook for 45 minutes over low heat, stirring regularly. Check the seasoning and add the garlic. Continue cooking for 15 minutes. Pour in the cream and bring just to a boil.

- To taste hot or cold, as a starter, as an accompaniment or as a main course!

How to choose and store an artichoke?

To make the best choice, the artichoke should be heavy and firm, with brittle leaves.

Be careful, if the top of the leaves is black, it means it has been picked for a long time.

Choose artichokes with tight leaves because this vegetable corresponds to the bud of a flower. If it is too open, the artichoke may be hard and with a lot of hay.

For its conservation, the artichoke has a shelf life of a few days by immersing the stem in water like a bouquet.

After cooking, avoid keeping it even in a cool place because the cooked artichoke oxidizes very quickly.
