Vanilla butter cream and red berry log

Here is an excellent yule log with vanilla butter cream and red fruits, as delicious as it is easy to make.

Ingredients for 4 persons

For the sponge cake:

  • 3 egg whites
  • 75 g sugar
  • 75 g flour

For the strawberry syrup:

  • 10 cl of water
  • 100 g sugar
  • 80 g strawberries
  • 150 g of red fruits (blueberries, currants, strawberries, raspberries)

For the vanilla buttercream:

  • 350 g unsalted butter
  • 10 cl of water
  • 6 egg whites
  • 135g sugar

For the sponge cake:

Preheat the oven to 170 ° C (th. 5/6).

  1. With a mixer, beat the egg whites with the sugar until the mixture doubles in volume.
  2. Add the sifted flour, mix gently.

Place a sheet of baking paper on an oven dish,

  1. Spread out the sponge cake with a spatula over 1 to 2 cm.
  2. Bake and cook for 15 minutes. Let cool.

For the strawberry syrup:

In a pot,

  1. Combine the water and sugar, boil.
  2. Let cool.
  • Wash and hull strawberries. Mix them and pass them through a sieve to eliminate the seeds.
  • Combine syrup and strawberries. Reserve.

For the vanilla buttercream:

In a pot,

  1. Combine the water and sugar. Heat to 118 ° C with the seeds of the vanilla bean previously scraped with the tip of a knife.

In a drummer,

  1. Add the egg whites, beat them while pouring in the syrup until the mixture sticks to the branches of the whisk.
  2. Add the softened butter to the cooled meringue.
  • Wash the red fruits, hull them if necessary.

On a work plan,

  1. Place the sponge cake soaked in syrup, cut a rectangle.
  2. Using a spatula, thinly spread a layer of vanilla buttercream.
  3. Divide ¾ of the fruit and roll up.
  4. Mask the log with the vanilla buttercream.
  5. Chill for at least 2 hours.

Garnish with the rest of the red fruits and enjoy.
