Made with beef, stewing beer and gingerbread, Flemish carbonade or carbonnade is a delicious dish.
Ingredients for 5-6 people:
- 1 kg of beef meat (bourguignon meat)
- 1 liter of beer for aging (type 3 Monts, Goudale, Jeanlain)
- 500 g of gingerbread
- 2 sheets of laurel
- 3 onions
Flemish carbonade is a simple, economical and easy to prepare recipe while being delicious and tasty!
Flemish carbonade recipe
> Start by cutting the beef (if it has not been done by your butcher) into large pieces of about 5 cm.
> Peel the onions and chop them not too finely.
Heat the pot with a little oil
> Brown the pieces of meat for a few minutes and then add the onions for 2 to 3 minutes.
> Pour in the beer so that the meat is completely covered and add the bay leaves.
> Crumble the gingerbread on top.
Cook over low heat and cover for 1h30 to 2 hours
> Mix regularly to prevent it sticking to the bottom of the pot.

Flemish carbonade or carbonnade is never as good as when prepared the day before because the meat is all the more tender and fragrant.
The carbonade goes well with good homemade fries, hash browns or lightly marbled mashed potatoes.
