Artichoke terrine

Easy, quick and fragrant, this artichoke terrine recipe is ideal as a starter or as a light meal with a salad.

Ingredients for 4 persons :

  • 350 g of fundsartichokes
  • 1 shallot
  • 60 g of raw ham
  • 1 pinch of powdered Espelette pepper
  • 3 eggs
  • 10 cl of liquid cream
  • 50 g of parmesan powder
  • Salt flower

For the sauce:

  • 2 tbsp. tablespoon of apple cider vinegar
  • 1 stirred yogurt
  • 1 drizzle of olive oil
  • 4 basil leaves
  • Salt flower
  • Freshly ground pepper

Artichoke terrine

Here is an easy and quick recipe to make: another way to eat artichokes!

Preheat the oven to 180 ° C (th. 6).

- Drain the artichoke bottoms.

- Peel and chop the shallot.

- Slice the ham into strips.

- In the bowl of a blender, place the artichoke bottoms, the chilli, the chopped shallot, the fleur de sel, the eggs and the liquid cream. Mix and adjust the seasoning if necessary.

- Add the slices of ham and the Parmesan and mix with a spoon.

- Pour the preparation into a previously buttered terrine.

- Place the terrine in a large dish and pour hot water around it.

Bake and cook in a bain-marie for 25 minutes. After 15 minutes of cooking, cover the terrine with aluminum foil to prevent it from coloring too much.

- Take the terrine out of the oven and let it cool.

Prepare the sauce:

- In a bowl, arrange the fleur de sel, pepper, vinegar, yogurt and oil. Add the chopped basil.

- Serve the terrine with its basil sauce.

Cellar side

Dominated by the assertive vegetal scents of the artichoke, just tempered by the aniseed notes of basil, this terrine has a smooth and melting texture full of sweetness that the heat of the pepper subtly enhances.

The southern color of this preparation will be enhanced with a white from Costières de Nîmes which, through its aniseed aromas, its sweetness and its warmth on the palate, will reinforce the respective roles of basil and Espelette.

As the northern wines risk giving an alliance marked by greenness and bitterness, we will therefore stay in the south for the choice of a rosé, for example with a Tavel whose character both round and spicy will avoid these two pitfalls.
