Delicious in the fall, this recipe for Chicken Parmentier with Pumpkin should seduce you as much as surprise you.
Ingredients for 4 persons :
- 500 g of pumpkin
- 1/2 onion
- 50 cl of milk
- 100 g semi-salted butter
- 1 slice of smoked bacon
- 100 g of chicken breast
- 1 sprig of thyme
- Salt pepper
Cut the slice of bacon into bacon.
In a saucepan, pour the milk, heat and place the smoked bacon in it. Leave to infuse for 30 minutes off the heat. Filter.
Peel and wash the onion.
Peel the pumpkin, cut it into pieces, place it in the filtered smoked milk. Add the onion and cook until the vegetables are tender.
Take the vegetables and mash them, add the butter. Season.
Steam the chicken breast topped with the thyme twig for 8 to 10 minutes. Remove the thyme and chop the chicken.
In 4 large verrines,
