Strawberry mousse

Both delicious and refreshing, this strawberry mousse is an easy and quick recipe to prepare.

Ingredients for 4 persons :

  • 250 g strawberries
  • 2 tbsp. lemon juice
  • 90 g brown sugar
  • 20 cl of liquid cream
  • 2 g of agar-agar
  • 2 eggs
  • 4 sheets of mint
  • 1 pinch of salt

Strawberry mousse

- Wash and reserve 4 strawberries for the decoration.

- Wash and hull the rest of the strawberries, mix them into a puree with the lemon juice.

- In a saucepan, pour the strawberry coulis, add the sugar, cream and agar-agar. Mix and bring to a boil for 2 minutes.

- Leave to cool without the coulis gelling.

- Separate the whites from the yolks.

- Whip the egg whites until stiff with a pinch of salt until you get a firm texture. Once the egg whites have been mounted, gently add them to the strawberry purée.

- Divide the foam obtained into 4 transparent cups. Place for about 6 hours in the refrigerator.

- At the last moment, garnish with a strawberry and mint leaves.


Before pouring the mousse, you can line the cups. Once taken, it will protrude from its containers, which will be very pleasant to watch!
